Mango-fest colours Lower Valley

The annual Mango Festival at the Agricultural Grounds showcased the varieties of mangos that are in season locally during the summer. – Photos: Patrick Brendel Cayman Islands Governor Duncan Taylor tries out Brasserie chef Niven Patel’s ceviche made with tuna, julie mangos and crispy cassava. Chef Eldon Ethridge of Hemingway’s doles out truffle mango and curry spring rolls. The Mango Festival drew adults and families to the Agricultural Grounds on Saturday. Jennifer Brown serves up the last of the mango ice cream made by Alvin McLaughlin, who says the ice cream helps spur sales of the Agriculture Society’s mango trees. The Ritz-Carlton, Grand Cayman executive pastry chef Ben Kallenbach explains his mango tarte tatin, a take on the classic French puff pastry traditionally made with apples. Michael’s Genuine head chef Thomas Tennant prepares mango wood-smoked pork shoulder with green mango slaw and mango barbecue sauce.
